Oh so FRESH!

I went to the tiny little farmers' market down the street from my house today and picked up lots of goodies. Picked up some fresh veggies, some pears, homemade jam, and some flowers. Thus, dinner had to consist of some of these amazing treasures. I made a wok-like dish. I diced up a purple bell pepper, a red bell pepper, two sweet peppers, a small egg plant, three cloves of garlic, a couple handfulls of cherry tomatoes and some spinach and stir-fried it all together. Separately I diced and fried some hard tofue. Once the veggie stir-fry was looking good I added the tofue to it and added a can of tomato sauce and spices and let it all simmer for a while longer. Once it was perfect dished up some rice and poured the fresh veggie goodness over it!

Breakfast. Breakfast. Breakfast.

Coffee. Eggs over hard. Toast. Summer oatmeal (essentially made regular oatmeal with milk and put some chocolate chips in it then pour it in a dish and let cool and put in fridge...the deliciousness of oatmeal but cool so it's nice for summer days).

Chicken Pasta

Red/Green/Yellow bell peppers, corn, peas, basil all fried with a little bit of olive oil and lemon juice with spices. The chicken was pan fried with a good amount of lemon pepper and lemon juice. All of it over whole-wheat pasta with a chunk of bread.

Classic & Comforting

Sourdough-swiss grilled cheese with classic tomatoe-basil soup. And a mint-jasmin ice tea.

Couscous Star!!!

Large couscous mixed in with stir fried
veggies. First stir fried asparagus, green
                   bell peppers and spinach. Additionally
                   chicken pot stickers from TJ's
                                                                                     surrounding the couscous.

Green Monster Food

Chicken quesadilla, sautéed asparagus (with lemon pepper and soy sauce) and a side of green salsa verde from TJ’s.

Red Lentils with Goodness

Another stew-like dish. Asparagus, broccoli, and spinach stir-fried together. Smoked beef hot dog boiled and then cut up and fried. Added the hot dog to into the stir-fry and put some lemon juice, wine, tomato sauce, and spices to mix it all together and thicken it all up. Also made red lentils and let them cook until they were mushy. Then placed the stew over the lentils.

Gnocchi Goodness

Butter, lots of fresh basil, finely diced sweet potatoes and spinach quickly sautéed. Then added the gnocchi and mixed it all together. The salad is a simple spinach, tomatoes, cucumbers, homemade crouton, and cheese with a olive oil, lemon juice and salt and pepper dressing.

New Cast Iron Skillet and First Meal in It

A piece of fresh salmon coated in fresh ground pepper, broccoli, diced up sweet potatoes, lots of lemon juice, some fresh basil and tomato sauce all stuck in the oven until its sizzling and the salmon is ready.

Breakfast Sandwitch!

Nutritious and delicious! Toasted English muffin, eggs over hard with tapetio and cheese, turkey bacon, fresh avocado. What more could be delicious...

PIE! PIE! PIE!

Peanut-butter pie! Pretty much the most delicious thing on the planet. Used a Graham cracker crust and simply poured the batter in and stuck it in the freezer. The batter consists of cream cheese, peanut butter, melted chocolate chips, mild, some sugar, and a tub of cool whip. The ingredients pretty much call for a heart attack but it's worth it!

Hearty & Healthy Lunch

Lunch sandwich with delicious seedy, whole-wheat sourdough bread from Trader Joes. It has klamata olive humus (also from TJ's) on both parts of the bread. Then the first layer is spinach, a hearty amount of honey turkey, then provolone cheese, then pickled roasted red peppers, then another layer of spinach. All of this accompanied with some delicious fresh veggies.

Veggie Stew Over Couscous

Broccoli, zucchini, red/green/yellow bell peppers, spinach, garlic, basil, all fried in a little bit of olive oil. Then added salt, pepper, lemon pepper, crushed red peppers, lemon juice and white zinfandel wine. (I don't drink wine, but I like to use it when I cook and I have found that making ice cubes out of the wine is the best way to store it and have it handy for cooking). Mixed all of those things together and then add a can of tomato sauce. Let it all simmer for a while and made plain couscous. For the finished product poured the stew over the couscous and added a plain fresh avocado on top. The drink to accompany the food was a mint lemonade sweetened with honey.

Fake Pizza!

I used Malabari Paratha bread from Trader Joe's (which is kind of like a flaky tortilla) then put some tomato sauce on it some spinach some turkey and roast beef lunch meet and covered it with mozzarella cheese! It was easy and yummy.

Sunday Feast!

There are three different things going on there as you can see. One is a salmon with a mango salsa. The second is my favorite, it turned out ridiculously delicious, it a sweet potato mash that has been stuffed into half of a red bell pepper and then baked with some mozzarella on top. And the last thing is a classic bruschetta with olive oil, garlic, fresh basil and cherry tomatoes.

Week one of a million before I can officially put a J.D. behind my name...

Butternut squash triangle past & green beans and cherry tomatoes with olive oil, salt, pepper, lemon pepper & chicken pan fried with salt, pepper, lemon pepper, cayenne pepper and lemon juice & homemade ice tea (one tea bag of earl gray and one tea bag of orange spice black tea).

I had some butternut squash triangle pasta left over so added a twist to it by boiling a hot dog, then I cut it up and fried it up. On the other side there is a simple salad of spinach, cherry tomatoes, and mozzarella cheese (with a simple olive oil, lemon juice and salt and pepper dressing); on top of the salad is baked eggplant with mozzarella cheese on top. The ice tea is the same as the one above.

This was lunch the other day. It's an everything bagel from Trader Joe's with a Marsala burger, pepper jack cheese and spinach. On the side there are cherry tomatoes with salt, pepper and a tiny drizzle of olive oil. On the other side there is an avocado with salt and pepper. The drink is homemade lemonade with fresh mint and honey (incredibly delicious!).

Cheese quesadilla, hot dog, ridiculously spicy banana peppers, and Trader Joe's salsa Verde sauce. The drink is half cranberry juice half bubbly water (yummyness of the bubbles in a soda but without the icky sugar).

Tonight's dinner: shredded zucchini and spinach stir-fried in a tiny bit of olive oil with salt, pepper, cayenne pepper and coriander. On the side there is delicious Trader Joe's sour dough bread with a large array of seeds on top of it.

Let the cooking begin!
