Sunday Feast!

There are three different things going on there as you can see. One is a salmon with a mango salsa. The second is my favorite, it turned out ridiculously delicious, it a sweet potato mash that has been stuffed into half of a red bell pepper and then baked with some mozzarella on top. And the last thing is a classic bruschetta with olive oil, garlic, fresh basil and cherry tomatoes.

All food groups represented on one plate...

Chicken quesedilia with spinach and mozzarella and salsa Verde on the side with half a grapefruit.

Week one of a million before I can officially put a J.D. behind my name...

Butternut squash triangle past & green beans and cherry tomatoes with olive oil, salt, pepper, lemon pepper & chicken pan fried with salt, pepper, lemon pepper, cayenne pepper and lemon juice & homemade ice tea (one tea bag of earl gray and one tea bag of orange spice black tea).

I had some butternut squash triangle pasta left over so added a twist to it by boiling a hot dog, then I cut it up and fried it up. On the other side there is a simple salad of spinach, cherry tomatoes, and mozzarella cheese (with a simple olive oil, lemon juice and salt and pepper dressing); on top of the salad is baked eggplant with mozzarella cheese on top. The ice tea is the same as the one above.

This was lunch the other day. It's an everything bagel from Trader Joe's with a Marsala burger, pepper jack cheese and spinach. On the side there are cherry tomatoes with salt, pepper and a tiny drizzle of olive oil. On the other side there is an avocado with salt and pepper. The drink is homemade lemonade with fresh mint and honey (incredibly delicious!).

Cheese quesadilla, hot dog, ridiculously spicy banana peppers, and Trader Joe's salsa Verde sauce. The drink is half cranberry juice half bubbly water (yummyness of the bubbles in a soda but without the icky sugar).

Tonight's dinner: shredded zucchini and spinach stir-fried in a tiny bit of olive oil with salt, pepper, cayenne pepper and coriander. On the side there is delicious Trader Joe's sour dough bread with a large array of seeds on top of it.

Let the cooking begin!
